For proper handling of food or food ingredients in powder form, it is important to identify the correct flow properties and influencing parameters.Clumpy or poor flowing powders are difficult totransport or dose accurately. Further processing such as homogeneous mixing with other productsis difficult. The flow of a powder can be attributed to two principal effects:
Anti-caking and free-flowing The terms free-flow and anti-caking are often used interchangeably to describe the same issue. However, caking and free-flow are two distinct issues and can be identified and treated accordingly. This can be illustrated by the graph below, where the speed vs. force of a powder is charted
Initially the force to get the powder to move increases while the powder is still at rest.
This is the caking area. Caking is caused by forces acting on a powder at rest. When the powder first
moves the force decreases, then increases again in a linear relationship with the speed. This is the
free-flow area. Free-flow describes maintaining the powder velocity once it is moving.
